  • 3 cups Fresh Blueberries Use organic for better flavor.
  • 2 teaspoons Lemon Zest
  • 1/4 cup Granulated Sugar (divided) Use part for blueberry mix.
  • 1 1/2 cups Granulated Sugar (divided) Mix with dry ingredients.
  • 1 1/2 cups All-Purpose Flour
  • 2 1/2 teaspoons Baking Powder
  • 3/4 teaspoon Salt
  • 1 1/2 cups Milk Can substitute with almond or oat milk.
  • 1 teaspoon Vanilla Extract
  • 12 tablespoons Unsalted Butter (divided) Use high-quality for better taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and melt 4 tablespoons of butter in a 9 x 13-inch pan.
  2. In a small saucepan over low heat, brown the remaining 8 tablespoons of butter until it takes on a rich, nutty aroma.
  3. In a medium bowl, combine fresh blueberries, lemon zest, and 1/4 cup of sugar, gently folding to combine.
  4. In another bowl, whisk together flour, baking powder, salt, and the remaining 1 1/2 cups of sugar; gradually mix in milk and a splash of vanilla until smooth.
Baking
  1. Pour the batter over the melted butter in the pan, making sure not to stir.
  2. Spoon the prepared blueberries on top evenly.
  3. Finish by sprinkling the additional 2 tablespoons of sugar over the top before baking for 45-50 minutes or until golden and bubbly.
Serving
  1. Allow it to cool for about 10 minutes to set, then serve warm, optionally with a scoop of vanilla ice cream.

Notes

To make it vegan, substitute the milk with almond or oat milk and the butter with vegan margarine. To make it gluten-free, use a gluten-free all-purpose flour blend.
