Ingredients
  

For the Tea
  • 2/3 cup water Start with fresh, filtered water for the best taste.
  • 1 handful butterfly pea flowers (fresh or dried) Look for vibrant blue, preferably organic.
For the Latte
  • 3/4 cup sweetened milk of your choice Whole, almond, or oat milk are great options.
  • 2 glasses of ice For an extra-refreshing sip.

Method
 

Preparation
  1. Boil the water: Start by bringing 2/3 cup of water to a gentle boil.
  2. Soak the butterfly pea flowers: Transfer the boiling water to a cup and add the handful of butterfly pea flowers. Let them steep for 2-3 minutes.
  3. Extract the color: Use a spoon to gently press down on the flowers against the side of the cup.
  4. Strain the blue tea: Set a strainer over a glass carafe and pour the mixture through it, discarding the flowers.
  5. Fill the glasses: Add ice to two glasses, filling them about halfway.
  6. Pour the milk: Distribute the sweetened milk equally between the glasses over the ice.
  7. Add the blue tea: Pour the butterfly pea tea over the milk until it reaches the rim of each glass. Stir to combine.

Notes

Keep any leftover butterfly pea tea in an airtight container in the fridge for up to three days. You can prepare the butterfly pea tea a day ahead and add milk and ice when ready to serve.
