Method
Brew the Butterfly Pea Tea
- Pour the warm water into a large cup or teapot.
- Add the dried butterfly pea flowers and stir gently. Allow it to steep for about 5-7 minutes until it reaches a deep blue color.
Strain the Tea
- Using a mesh strainer, carefully strain out the butterfly pea flowers into another container or pitcher. Discard the flowers, and now you have a beautiful blue tea.
Sweeten the Tea
- While the tea is still warm, add the granulated sugar, stirring until it dissolves completely.
Mix with Lemon Juice
- Measure out and mix in the lemon juice to your sweetened butterfly pea tea.
Prepare the Glasses
- Fill each glass halfway with ice.
Compose the Drink
- Pour your butterfly pea lemonade over the ice, filling each glass up to the halfway mark.
- Top each glass off with soda water for fizz.
Garnish & Serve
- Add lemon slices and rosemary sprigs for garnish if desired. Serve immediately.
Notes
Store the brewed but unsweetened butterfly pea tea in the fridge for up to a week. The drink is best consumed fresh. Experiment with additional flavors like ginger or seasonal fruits.
