Ingredients
  

For the Tea
  • 1/2 cup dried butterfly pea flowers Choose high-quality flowers for best color and flavor.
  • 3 cups water Use warm water to steep the flowers.
  • 1/3 cup granulated sugar Adjust sweetness to taste; honey or agave can be used.
For the Lemonade
  • 1/3 cup lemon juice Fresh-squeezed is recommended for the best flavor.
  • 3 cups ice Essential for serving cold.
  • 3 cups soda water Adds fizz; tonic can be used for a twist.
  • Optional garnishes: thin lemon slices and fresh rosemary sprigs For an elegant touch.

Method
 

Brew the Butterfly Pea Tea
  1. Pour the warm water into a large cup or teapot.
  2. Add the dried butterfly pea flowers and stir gently. Allow it to steep for about 5-7 minutes until it reaches a deep blue color.
Strain the Tea
  1. Using a mesh strainer, carefully strain out the butterfly pea flowers into another container or pitcher. Discard the flowers, and now you have a beautiful blue tea.
Sweeten the Tea
  1. While the tea is still warm, add the granulated sugar, stirring until it dissolves completely.
Mix with Lemon Juice
  1. Measure out and mix in the lemon juice to your sweetened butterfly pea tea.
Prepare the Glasses
  1. Fill each glass halfway with ice.
Compose the Drink
  1. Pour your butterfly pea lemonade over the ice, filling each glass up to the halfway mark.
  2. Top each glass off with soda water for fizz.
Garnish & Serve
  1. Add lemon slices and rosemary sprigs for garnish if desired. Serve immediately.

Notes

Store the brewed but unsweetened butterfly pea tea in the fridge for up to a week. The drink is best consumed fresh. Experiment with additional flavors like ginger or seasonal fruits.
