Preparation
  1. Preheat your oven to 350°F (175°C). Prepare three 9-inch round cake pans by greasing and flouring them.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. In a separate bowl, mix the vegetable oil and eggs until smoothly blended. Stir in the shredded carrots and crushed pineapple.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the nuts if using.
  5. Divide the batter evenly among the prepared cake pans.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
