- Begin by slicing the garlic crosswise into 2 mm thick pieces for optimal release of flavors. Set aside.

Mixing
- Pour the fish sauce into a small bowl, and add the granulated sugar. Stir vigorously with a spoon until fully dissolved.
- Once fully mixed, add the sliced garlic, chopped chilies, and lime juice (plus lime slices if using).
- Give it a good mix with a spoon until well combined. Flavors will intensify as it sits!
Final Touches
- Taste and adjust the seasoning if needed.
- Transfer it into a sterilized jar and seal it up. Let it sit at room temperature for about an hour before using.
