  • 2 teaspoons granulated sugar You can substitute with palm sugar for authenticity.
  • 1 tablespoon lime juice, freshly squeezed For a zesty punch.

Preparation
  1. Begin by slicing the garlic crosswise into 2 mm thick pieces for optimal release of flavors. Set aside.
  2. Take the Thai chilies and chop them into pieces around 3 mm thick, releasing their vibrant heat. (Chef's Tip: Wear gloves to avoid touching your face!)
Mixing
  1. Pour the fish sauce into a small bowl, and add the granulated sugar. Stir vigorously with a spoon until fully dissolved.
  2. Once fully mixed, add the sliced garlic, chopped chilies, and lime juice (plus lime slices if using).
  3. Give it a good mix with a spoon until well combined. Flavors will intensify as it sits!
Final Touches
  1. Taste and adjust the seasoning if needed.
  2. Transfer it into a sterilized jar and seal it up. Let it sit at room temperature for about an hour before using.

Notes

Store in the refrigerator for up to 2 weeks. Make-ahead instructions recommend creating a larger batch to enhance flavor.
