Ingredients
  

Cookie Crust and Topping
  • 2 cups Refrigerated chocolate chip cookie dough Use a premium brand for best flavor.
Cheesecake Layer
  • 16 oz Cream cheese Opt for full-fat for a richer taste.
  • 1/2 cup Granulated sugar Can substitute with monk fruit sweetener to reduce calories.
  • 1 large Egg (at room temperature)
  • 1 tsp Vanilla extract Enhances flavor.
  • 1 tbsp Lemon juice (optional) Brightens flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 13x9" pan with parchment paper.
  2. Take half of the cookie dough and freeze it for a few hours for easy slicing.
Baking
  1. Once frozen, slice the cookie dough into 1/4" pieces and layer it evenly in the prepared pan to form a crust.
  2. Bake for about 10 minutes until lightly golden and set.
  3. In a mixing bowl, beat the cream cheese, egg, granulated sugar, and vanilla extract until smooth.
  4. Spread the cheesecake mixture over the hot cookie crust.
  5. Distribute the remaining cookie dough slices on top, pressing gently into the cheesecake layer.
  6. Bake for 35-40 minutes until the edges are set and the center is slightly jiggy.
Cooling and Serving
  1. Allow to cool to room temperature, then refrigerate for at least 2 hours before slicing into bars.
  2. Serve chilled or at room temperature.

Notes

For a rustic presentation, serve on a wooden cutting board cut into neat squares. Pair with whipped cream or ice cream. For dietary variations: vegan and low-carb options are available.
