Method
 

Combine and Heat
  1. In a heavy-bottomed saucepan, combine the sugar, corn syrup, and water. Stir continuously over medium heat until the sugar dissolves.
Boil and Monitor
  1. Increase the heat and bring the mixture to a boil. Cease stirring once boiling; allow it to cook until it reaches the hard crack stage (300°F/150°C), using a candy thermometer for accuracy.
Flavor Infusion
  1. Remove from heat, then quickly stir in the ground cinnamon and any optional flavoring. If desired, add food coloring to the hot mixture to achieve your favorite hue.
Spread the Mixture
  1. Immediately pour the hot candy mixture onto an oiled baking sheet, using a spatula to spread it evenly for a uniform thickness.
Cool and Cut
  1. Allow the candy to cool completely. Once hardened, break it into pieces as desired. Dust with powdered sugar to prevent sticking.
