  • 4 pieces cod fillets Fresh is best for flavor; try to get wild-caught if possible!
  • 2 cups roasted red peppers Jarred or homemade work beautifully; prefer using jarred for convenience
  • 1 clove garlic, minced Adds depth of flavor; don’t skip!
  • 2 tablespoons olive oil Extra virgin for the best flavor
  • to taste salt Use coarse sea salt for enhanced flavor
  • to taste black pepper Freshly ground is best
  • 1 tablespoon fresh parsley, chopped For garnishing; adds a pop of color

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. While the oven heats, prep all your ingredients so everything is organized and ready to go.
  3. In a blender, combine the roasted red peppers, garlic, a drizzle of olive oil, salt, and pepper. Blend until smooth and set aside.
Baking the Cod
  1. Place a skillet over medium-high heat and add a tablespoon of olive oil. Once it shimmers, add the cod fillets.
  2. Cook for about 3-4 minutes until golden brown. Flip carefully and cook for another 3-4 minutes until the cod is opaque and flakes easily with a fork.
Serving
  1. Spoon the roasted red pepper sauce onto plates, placing the cod on top.
  2. Garnish with fresh parsley and a sprinkle of black pepper. Serve immediately while the dish is warm and inviting.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For make-ahead potential, the sauce can be stored in the fridge for up to 5 days.
