Preparation
- Preheat your oven to 400°F (200°C).
- While the oven heats, prep all your ingredients so everything is organized and ready to go.
- In a blender, combine the roasted red peppers, garlic, a drizzle of olive oil, salt, and pepper. Blend until smooth and set aside.
Baking the Cod
- Place a skillet over medium-high heat and add a tablespoon of olive oil. Once it shimmers, add the cod fillets.
- Cook for about 3-4 minutes until golden brown. Flip carefully and cook for another 3-4 minutes until the cod is opaque and flakes easily with a fork.
Serving
- Spoon the roasted red pepper sauce onto plates, placing the cod on top.
- Garnish with fresh parsley and a sprinkle of black pepper. Serve immediately while the dish is warm and inviting.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For make-ahead potential, the sauce can be stored in the fridge for up to 5 days.
