  • 2 cups broccoli florets

  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the orzo according to the package instructions; then drain and let it cool slightly.
  3. In a large cast iron skillet, heat the olive oil over medium heat. Add the broccoli florets and sauté until tender.
Mixing
  1. In a large mixing bowl, combine the cooked orzo, shredded chicken, sautéed broccoli, cream or milk, half of the cheese, garlic powder, salt, pepper, and paprika. Mix until evenly coated.
Baking
  1. Transfer the mixture into a baking dish and top generously with the remaining cheese.
  2. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbling and golden brown.

Notes

For a healthier version, consider using whole grain orzo and adding fresh spinach or kale. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
