Preparation
- Preheat your oven to 400°F (200°C).
- In a heavy-bottomed cast iron skillet, melt the butter over medium heat.
- Add the chopped onions and celery, sauté until soft and translucent — about 5 minutes.
- Stir in the flour and let it cook for 1 minute until it turns slightly golden.
- Gradually pour in the chicken broth and heavy cream, whisking continuously until the mixture thickens.
- Fold in the cooked chicken and mixed vegetables. Season generously with salt and pepper.
Assembly
- Roll out the puff pastry on a lightly floured surface and drape it over the skillet mixture in an oven-safe dish.
- Cut slits in the pastry with a sharp knife to allow steam to escape.
Baking
- Bake for 25-30 minutes, or until the puff pastry is golden brown and puffy.
- Remove from the oven and let cool slightly before serving.
Notes
For a beautiful presentation, serve in elegant soup bowls with a sprinkling of fresh parsley or thyme on top. Pair with a crisp salad dressed in a light vinaigrette.
