  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 package puff pastry Choose all-butter puff pastry for the best flakiness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a heavy-bottomed cast iron skillet, melt the butter over medium heat.
  3. Add the chopped onions and celery, sauté until soft and translucent — about 5 minutes.
  4. Stir in the flour and let it cook for 1 minute until it turns slightly golden.
  5. Gradually pour in the chicken broth and heavy cream, whisking continuously until the mixture thickens.
  6. Fold in the cooked chicken and mixed vegetables. Season generously with salt and pepper.
Assembly
  1. Roll out the puff pastry on a lightly floured surface and drape it over the skillet mixture in an oven-safe dish.
  2. Cut slits in the pastry with a sharp knife to allow steam to escape.
Baking
  1. Bake for 25-30 minutes, or until the puff pastry is golden brown and puffy.
  2. Remove from the oven and let cool slightly before serving.

Notes

For a beautiful presentation, serve in elegant soup bowls with a sprinkling of fresh parsley or thyme on top. Pair with a crisp salad dressed in a light vinaigrette.
