Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and ground beef; cook until browned, stirring occasionally until the onions are translucent.
  3. Carefully drain any excess fat from the pot to keep the dish light.
  4. Add the diced potatoes, beef broth, garlic powder, paprika, salt, and pepper. Stir well and bring to a boil.
  5. Reduce the heat, cover, and simmer for about 20 minutes until the potatoes are fork-tender.
  6. Incorporate the heavy cream and half of the cheese, stir gently until creamy and well-mixed.
  7. Finally, sprinkle the remaining cheese on top, cover, and let it melt for a few minutes before serving hot.

Notes

For a vegan option, replace ground beef with lentils or plant-based meat, use vegetable broth, and substitute heavy cream with coconut or cashew cream. For gluten-free, ensure the broth is certified gluten-free. For keto, substitute potatoes with cauliflower.
