- In a large pot, heat 1 tablespoon of olive oil over medium heat for 1-2 minutes.
- Add the sliced chicken sausage and cook until browned, about 5 minutes.
- Stir in the diced onion and minced garlic, cooking until fragrant and the onions are translucent, about 2 minutes.
- Add the orzo, chicken broth, and milk. Bring to a gentle simmer, stirring occasionally for about 2-3 minutes.
- Cover the pot and let it gently boil for 8-10 minutes, stirring occasionally to prevent sticking.
- Uncover the pot and add the broccoli florets and grated Parmesan. Stir until the cheese melts and the broccoli is tender, about 3-4 minutes.
- Season with salt and black pepper to taste and stir to combine.
- Serve in bowls and garnish with extra Parmesan or chopped parsley, if desired.
Notes
Make-Ahead Instructions: Prep the sausage, onion, and broccoli in advance for quicker cooking. If you have leftovers, cool and transfer to an airtight container for up to 3 days in the fridge.
