  • 2 cups chicken broth Homemade is great; opt for low-sodium for a healthier option.
  • 1 cup milk Whole milk yields the creamiest result; dairy alternatives can be used.
  • 2 cups broccoli florets Fresh broccoli is ideal; frozen may require less cooking time.
  • 1/2 cup grated Parmesan cheese Use freshly grated for the best flavor.
  • 1/2 teaspoon salt Adjust according to taste.
  • 1/4 teaspoon black pepper Freshly cracked black pepper makes a big difference.

Method
 

Cooking Instructions
  1. In a large pot, heat 1 tablespoon of olive oil over medium heat for 1-2 minutes.
  2. Add the sliced chicken sausage and cook until browned, about 5 minutes.
  3. Stir in the diced onion and minced garlic, cooking until fragrant and the onions are translucent, about 2 minutes.
  4. Add the orzo, chicken broth, and milk. Bring to a gentle simmer, stirring occasionally for about 2-3 minutes.
  5. Cover the pot and let it gently boil for 8-10 minutes, stirring occasionally to prevent sticking.
  6. Uncover the pot and add the broccoli florets and grated Parmesan. Stir until the cheese melts and the broccoli is tender, about 3-4 minutes.
  7. Season with salt and black pepper to taste and stir to combine.
  8. Serve in bowls and garnish with extra Parmesan or chopped parsley, if desired.

Notes

Make-Ahead Instructions: Prep the sausage, onion, and broccoli in advance for quicker cooking. If you have leftovers, cool and transfer to an airtight container for up to 3 days in the fridge.
