Cheese

Dressing
  • 2 tablespoons extra virgin olive oil High-quality olive oil enhances flavor.
  • 1 tablespoon lemon juice Fresh lemon juice is recommended.
  • 1 tablespoon red wine vinegar Balsamic vinegar can be a sweeter alternative.
  • 1 teaspoon dried oregano Fresh oregano works too.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground for better flavor.

Method
 

Preparation
  1. Begin by thinly slicing the radishes, cucumber, and red onion.
  2. In a large mixing bowl, combine the sliced radishes, cucumber, and red onion.
  3. Gently fold in the crumbled feta cheese, chopped parsley, and mint.
  4. In a separate bowl, whisk together the olive oil, lemon juice, red wine vinegar, oregano, salt, and black pepper.
  5. Drizzle the dressing over the salad ingredients and toss gently to coat.
  6. Allow the salad to rest for about five minutes.
  7. Serve chilled or at room temperature.

Notes

To avoid a soggy salad, use a light hand with the dressing; serve additional dressing on the side if needed. Store leftovers in an airtight container for 2-3 days, but salad is best enjoyed fresh.
