Method
Prepare the Filling
- Place the garlic in a mortar and pound until fine with a pestle.
- Add the chopped cilantro root and continue to pound until combined.
- Add the white peppercorns and pound until fine. Set aside the mixture.
Mix the Pork
- In a large bowl, combine the ground pork, the pounded herb mixture, soy sauce, and sugar. Use hands to mix well until fully combined.
Assemble the Wontons
- Take a wonton wrapper and place about a tablespoon of pork filling in the center.
- Fold one edge of the square to another to form a triangle, using a bit of water to seal the edges.
- Fold the left edge of the triangle to the middle, and then the right edge over that.
- Continue this process until you have about 40 wontons.
Oil and Air Fry
- Coat each wonton with olive oil using a brush, ensuring they don’t stick together. Brush both sides.
- Lay the coated wontons flat in the air fryer basket, avoiding crowding for optimal crispiness.
Cooking
- Set the air fryer to 356°F (180°C) and cook for 20 minutes.
- Halfway through, give the basket a gentle shake for even cooking.
- Check the wontons at the 10-minute mark for golden perfection and return them to cook longer if needed.
Serve
- Once ready, carefully remove the wontons from the air fryer and serve hot.
Notes
Cooked wontons can be stored in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for the best results. You can make a big batch and freeze for later use.
