Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  2. In a large mixing bowl, whisk together the oats, flour, brown sugar, melted butter, baking powder, and salt until just combined, creating a crumbly texture.
  3. Press half of this mixture firmly into the bottom of the prepared baking dish, ensuring an even layer.
Cooking
  1. In a medium saucepan over medium heat, combine the chopped dates, water, lemon juice, and vanilla extract. Cook until the dates soften and the mixture thickens, about 10 minutes.
  2. Spoon and spread the luscious date mixture smoothly over the crust in the baking dish.
  3. Sprinkle the remaining oat mixture evenly over the top.
  4. Bake for 25-30 minutes, or until the top is golden brown.
  5. Allow the Date Squares to cool completely in the dish before cutting into squares.
