- In a large mixing bowl, whisk together the oats, flour, brown sugar, melted butter, baking powder, and salt until just combined, creating a crumbly texture.
- Press half of this mixture firmly into the bottom of the prepared baking dish, ensuring an even layer.
Cooking
- In a medium saucepan over medium heat, combine the chopped dates, water, lemon juice, and vanilla extract. Cook until the dates soften and the mixture thickens, about 10 minutes.
- Spoon and spread the luscious date mixture smoothly over the crust in the baking dish.
- Sprinkle the remaining oat mixture evenly over the top.
- Bake for 25-30 minutes, or until the top is golden brown.
- Allow the Date Squares to cool completely in the dish before cutting into squares.
