  • 4 cups Fresh Peaches, sliced Opt for ripe, fresh peaches for the best flavor.
  • 1 cup Sugar Consider using coconut sugar for a lower glycemic index.
  • 2 tablespoons Lemon Juice Can substitute with apple cider vinegar or orange juice.
  • 1 teaspoon Vanilla Extract
Batter
  • 1 cup All-Purpose Flour May substitute with gluten-free flour blend.
  • 1 cup Milk Use almond milk for a vegan option.
  • 1/2 cup Butter, melted For a vegan option, replace with coconut oil.
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt Use unsalted butter for more controlled flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the sliced peaches, sugar, lemon juice, and vanilla extract. Allow the mixture to sit for about 10 minutes.
  3. In another bowl, whisk together the flour, milk, melted butter, baking powder, and salt until smooth.
  4. Pour the batter into a greased baking dish, smoothing the top with a spatula.
  5. Spoon the peach mixture over the batter evenly.
Baking
  1. Bake for 30–35 minutes, or until the top is golden brown and a toothpick comes out clean.
  2. Allow to cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream for a delightful contrast of temperatures. Garnish with fresh mint leaves for added flavor.
