Ingredients
  

For the pickling
  • 1 lb baby potatoes Opt for organic for better flavor.
  • 1 cup vinegar (white or apple cider) Unfiltered apple cider vinegar is recommended.
  • 2 cloves garlic, minced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon red pepper flakes Optional for added spice.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a pot, bring water to a rolling boil, then gently add the baby potatoes.
  2. Cook until tender, about 15-20 minutes. Use a fork to check for doneness; they should be easily pierced but not mushy.
  3. In a large bowl, combine vinegar, minced garlic, dill, parsley, red pepper flakes, salt, and pepper. Whisk together until well blended.
  4. Once the potatoes are cool enough to handle, slice them in half.
  5. Add the warm potatoes to the dressing, allowing them to absorb the flavors.
  6. Gently toss the potatoes in the dressing until each piece is well-coated.
  7. Let the mixture sit for at least 1 hour, preferably overnight in the refrigerator.
  8. Enjoy your pickled potatoes chilled or at room temperature.

Notes
