For the Fruit Filling
  • 6 cups fresh plums, pitted and sliced Any variety such as red or black plums is suitable, but ensure they are ripe.
  • 3/4 cup granulated sugar for fruit mixture
  • 1 tablespoon lemon juice Freshly squeezed for best flavor.
  • 1 teaspoon vanilla extract Use high-quality for richer taste profile.
  • 1 tablespoon cornstarch To thicken the juices from the fruit.
For the Batter
  • 1 cup all-purpose flour For a gluten-free version, use gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted Can substitute with coconut oil for a vegan version.
  • 1/2 cup whole milk Use almond milk for a vegan version.
  • 1/2 teaspoon vanilla extract for batter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced plums, 3/4 cup sugar, lemon juice, vanilla extract, and cornstarch. Toss gently and set aside.
  3. In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
  4. Make a well in the center, pour in melted butter and milk, then add the remaining vanilla. Stir until just combined.
Baking
  1. In a greased cast iron skillet, pour the fruit mixture and drop spoonfuls of batter on top.
  2. Bake for about 30-35 minutes, or until golden brown and a toothpick inserted into the batter comes out clean.
Serving
  1. Allow to cool slightly before serving warm with ice cream or whipped cream.

Notes

To enhance flavor, add a pinch of cinnamon or nutmeg to the fruit mixture. For best texture, avoid overmixing the batter.
