Ingredients

  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1/2 cup carrots, grated

  • 1/4 cup raisins or cranberries Soaking in warm water or juice is optional.

  • 1/4 cup walnuts or pecans, chopped
  • 1/3 cup mayonnaise Can substitute with a vegan alternative.
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey A keto alternative can be used.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the green cabbage, red cabbage, apples, grated carrots, raisins, and chopped nuts. Stir gently to mix everything evenly.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth and well combined.
  3. Pour the dressing over the slaw mixture and toss until everything is well coated.
  4. Let the slaw sit for at least 30 minutes before serving to allow the flavors to meld together.
  5. Serve chilled and enjoy the delightful crunch and refreshing taste!

Notes

Store leftovers in an airtight container for up to 3 days. Revive with a splash of apple cider vinegar or lemon juice before serving.
