  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 tablespoon Sugar Substitute refined sugar with monk fruit sweetener or coconut sugar for a healthier option.
Wet Ingredients
  • 1 cup Milk
  • 2 large Eggs For vegan option, replace with flaxseed mixture.
Fruits
  • 1 cup Fresh Peaches, diced Select ripe, seasonal peaches for the best taste.
For Frying
  • Oil for Frying Use a neutral-flavored oil with a high smoke point.
  • Powdered Sugar for Dusting

Preparation
  1. In a large bowl, combine the flour, baking powder, salt, and sugar. Mix well to ensure an even distribution.
  2. In another bowl, whisk together the milk and eggs until smooth and creamy.
  3. Gradually pour the wet mixture into the dry ingredients, folding gently until just combined. Be careful not to overmix; the batter should be slightly lumpy. Now, carefully fold in the diced peaches.
Cooking
  1. Heat oil in a deep skillet to about 350°F (175°C). A deep frying thermometer is helpful to maintain the right temperature.
  2. Drop spoonfuls of batter into the hot oil, frying until golden brown on both sides, about 3 minutes each. Listen for that satisfying sizzle!
  3. Remove the fritters and drain on paper towels to absorb excess oil.
  4. Dust generously with powdered sugar before serving, letting that sweetness complement the peaches.

Notes

To reheat your fritters while retaining their texture, use an oven at 350°F (175°C) for about 10 minutes or an air fryer for 5 minutes. Avoid using a microwave, as it will make them soggy.
