Preparation
- In a large bowl, combine the flour, baking powder, salt, and sugar. Mix well to ensure an even distribution.
- In another bowl, whisk together the milk and eggs until smooth and creamy.
- Gradually pour the wet mixture into the dry ingredients, folding gently until just combined. Be careful not to overmix; the batter should be slightly lumpy. Now, carefully fold in the diced peaches.
Cooking
- Heat oil in a deep skillet to about 350°F (175°C). A deep frying thermometer is helpful to maintain the right temperature.
- Drop spoonfuls of batter into the hot oil, frying until golden brown on both sides, about 3 minutes each. Listen for that satisfying sizzle!
- Remove the fritters and drain on paper towels to absorb excess oil.
- Dust generously with powdered sugar before serving, letting that sweetness complement the peaches.
Notes
To reheat your fritters while retaining their texture, use an oven at 350°F (175°C) for about 10 minutes or an air fryer for 5 minutes. Avoid using a microwave, as it will make them soggy.
