Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
Mixing
  1. In a large bowl, cream the softened unsalted butter, granulated sugar, and powdered sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until fully combined.
  3. Gradually add the dry ingredients to the wet mixture, mixing just until no streaks of flour remain.

Baking
  1. Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  3. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
