Preparation
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
Mixing
- In a large bowl, cream the softened unsalted butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until no streaks of flour remain.
- Gently fold in the rainbow sprinkles until evenly distributed.
Baking
- Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
