Noodles and Base Ingredients
  • 2.8 ounces dried glass noodles Look for high-quality noodles that don't contain preservatives.
  • 3.52 ounces shiitake mushrooms (sliced) Fresh or dried; if dried, rehydrate beforehand.
  • 1 tablespoon olive oil Choose a light olive oil for cooking.
  • 10 pieces shrimp (approx. 7.05 ounces or 200 grams) Use fresh, shelled, and deveined shrimp with tails on for presentation.
  • 3/4 cup chopped Chinese celery Provides a lovely crunch; may substitute with regular celery.
  • 5 cloves garlic (peeled) Fresh garlic provides an unbeatable aroma.
  • 8-10 slices ginger (peeled) Fresh ginger adds aromatic warmth.
Sauce Ingredients
  • 1 teaspoon sugar Helps balance the flavors in the sauce.
  • 1 teaspoon ground white pepper Adds a subtle spiciness.
  • 2 tablespoons soy sauce Use low-sodium if desired.
  • 1 teaspoon sweet soy sauce Adds sweetness and color.
  • 2 tablespoons oyster sauce Essential for umami flavor.
  • 3/4 cup water Creates a luscious sauce.

Method
 

Preparation
  1. Soak the dried glass noodles in room temperature water, following package instructions, for about 15-20 minutes. Cut them for easier eating later.
  2. Pound 5 cloves of garlic and 3 slices of ginger in a mortar until fine. Transfer to a mixing bowl and add sugar, ground white pepper, soy sauce, sweet soy sauce, oyster sauce, and water. Mix well to create the sauce.
Cooking
  1. Drain the soaked noodles and cut them to prevent clumping. Toss the noodles with the prepared sauce and sliced shiitake mushrooms.
  2. In a pan, heat olive oil and add ginger slices over medium heat. Add the saucy noodles and mushrooms to the pan, layering the shrimp on top.
  3. Cover and cook for about 5 minutes until shrimp turn pink and noodles absorb the sauce.
  4. Uncover and gently toss the noodles to mix. Add chopped Chinese celery, cover again, and cook for an additional minute.
  5. Turn off the heat and serve warm, garnished with fresh herbs if desired.

Notes

Use fresh ingredients for the best flavor. If using dried shiitake mushrooms, soak in hot water for 20-30 minutes. For extra spice, add sliced chili peppers to the sauce.
