Method
Marinate the Chicken
- In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper. Whisk until fully emulsified.
- Add the chicken breasts to the marinade, turning to coat evenly. Cover and refrigerate for at least 30 minutes.
- For deeper flavor, marinate for up to 8 hours.
Prepare the Tzatziki
- Grate the cucumber and press between paper towels to remove excess moisture.
- Mix cucumber with Greek yogurt, minced garlic, lemon juice, olive oil, fresh dill, salt, and pepper in a separate bowl.
- This can be prepared ahead of time and stored in the fridge.
Cook the Chicken
- Preheat your grill or skillet over medium heat.
- Cook the marinated chicken for about 6-8 minutes per side or until the internal temperature reaches 165°F.
- Remove from heat, let the chicken rest for 5 minutes, then slice thinly against the grain.
Warm the Pitas
- Warm the pitas on the grill or in a toaster for about 30 seconds per side until slightly charred.
Assemble the Pitas
- Layer shredded lettuce, sliced tomato, sliced red onion, and grilled chicken slices in each pita.
- Add a generous dollop of tzatziki.
Serve
- Serve immediately and enjoy!
- Avoid overfilling to prevent exploding pitas.
Notes
Choose high-quality ingredients for the best flavor. You can adjust spice levels by adding crushed red pepper or jalapeños. Store leftovers in an airtight container for 3-4 days in the fridge.
