Ingredients
  

For the Marinated Chicken
  • 2 pieces chicken breast (choose organic for best flavor)
  • 2 tablespoons olive oil (good quality extra virgin recommended)
  • 2 tablespoons lemon juice (freshly squeezed is best)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
For the Tzatziki Sauce
  • 1 cup Greek yogurt (full-fat preferred for creaminess)
  • 0.5 piece cucumber, grated (use seedless for less moisture)
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
For Assembly
  • 4 pieces pita bread (whole wheat or traditional, your choice)
  • 1 piece tomato, sliced
  • 0.25 piece red onion, sliced
  • 1 cup lettuce, shredded (romaine or iceberg for crunch)

Method
 

Marinate the Chicken
  1. In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper. Whisk until fully emulsified.
  2. Add the chicken breasts to the marinade, turning to coat evenly. Cover and refrigerate for at least 30 minutes.
  3. For deeper flavor, marinate for up to 8 hours.
Prepare the Tzatziki
  1. Grate the cucumber and press between paper towels to remove excess moisture.
  2. Mix cucumber with Greek yogurt, minced garlic, lemon juice, olive oil, fresh dill, salt, and pepper in a separate bowl.
  3. This can be prepared ahead of time and stored in the fridge.
Cook the Chicken
  1. Preheat your grill or skillet over medium heat.
  2. Cook the marinated chicken for about 6-8 minutes per side or until the internal temperature reaches 165°F.
  3. Remove from heat, let the chicken rest for 5 minutes, then slice thinly against the grain.
Warm the Pitas
  1. Warm the pitas on the grill or in a toaster for about 30 seconds per side until slightly charred.
Assemble the Pitas
  1. Layer shredded lettuce, sliced tomato, sliced red onion, and grilled chicken slices in each pita.
  2. Add a generous dollop of tzatziki.
Serve
  1. Serve immediately and enjoy!
  2. Avoid overfilling to prevent exploding pitas.

Choose high-quality ingredients for the best flavor. You can adjust spice levels by adding crushed red pepper or jalapeños. Store leftovers in an airtight container for 3-4 days in the fridge.
