Ingredients
  

For the Steak Marinade
  • 1 pound flank steak Look for grass-fed options for richer flavor.
  • 1 teaspoon chili powder Adds a robust kick; prefer a high-quality blend.
  • 1 teaspoon ground cumin Essential for that smoky aroma; use fresh.
  • 1/2 teaspoon garlic powder Granulated garlic for better flavor absorption.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground for maximum flavor.
  • 2 tablespoons olive oil Use good quality extra virgin.
  • 2 limes lime juice Freshly squeezed elevates flavor.
For the Tacos
  • 8 small corn tortillas Try to find fresh ones for authenticity.
  • 2 ripe avocados Perfectly ripe for creamy salsa.
  • 1 medium tomato Fresh and juicy.
  • 1/4 cup finely chopped red onion Adds a nice crunch.
  • 1 jalapeno jalapeno pepper Adjust based on heat tolerance.
  • 2 tablespoons chopped fresh cilantro Fresh herbs are a must for flavor.

Method
 

Preparation
  1. In a bowl, whisk together the chili powder, ground cumin, garlic powder, salt, black pepper, 1 tablespoon of olive oil, and the juice of 1 lime until well combined.
  2. Let the steak marinate for at least 20 minutes, or longer for more flavor.
  3. Chop the avocados, tomato, red onion, and jalapeno into small pieces and combine in another bowl with cilantro, juice from the second lime, and the remaining tablespoon of olive oil. Season to taste.
Cooking
  1. Preheat your grill or grill pan to medium-high heat and oil the grates.
  2. Remove steak from marinade and grill for 4-5 minutes per side for medium-rare.
  3. Warm the corn tortillas on the grill for about 30 seconds per side until pliable.
  4. After grilling, let steak rest for 5 minutes, slice thinly against the grain, and fill each tortilla with steak slices and avocado salsa.

Notes

Leftovers can be stored separately in airtight containers. The steak lasts up to 2 days, while the salsa will stay fresh for up to 3 days.
