Ingredients
  

Scone Base
  • 2 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted Butter, cold and cubed Ensure it’s as cold as possible for flaky texture.
  • 1 cup Fresh Peaches, diced Use ripe, juicy peaches for maximum sweetness.
  • 1/2 cup Heavy Cream Can be substituted with coconut cream for vegan option.
  • 1 teaspoon Vanilla Extract
Honey Glaze
  • 1/2 cup Powdered Sugar
  • 1 tablespoon Honey
  • as needed water Water

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt until well combined.
  3. Add the cubed butter and mix until the mixture resembles coarse crumbs.
  4. Gently fold in the diced peaches without overworking the dough.
  5. In another bowl, whisk together the heavy cream and vanilla extract until smooth.
  6. Pour the wet ingredients into the dry mixture and stir just until combined; be careful not to overmix.
Baking
  1. Turn the dough onto a floured surface and pat it into a circle about 1 inch thick. Cut into wedges and place on a lined baking sheet.
  2. Bake for 15-20 minutes or until golden brown and fragrant.
Glazing
  1. For the glaze, whisk together powdered sugar, honey, and water until smooth. Drizzle over warm scones before serving.
