Ingredients
  

Bagel Base
  • 4 cups all-purpose flour Choose high-protein bread flour for a chewier texture.
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1 tablespoon sugar Swap for monk fruit or honey to reduce calories.
  • 1 teaspoon salt
  • 1.5 cups warm water
Flavor Elements
  • 1 cup fresh blueberries Use organic blueberries for superior flavor.
  • 1 tablespoon baking soda (for boiling water)
  • 1 egg for egg wash, optional Substitute with almond milk and cornstarch for a vegan option.

Preparation
  1. In a large bowl, mix the warm water and sugar, then add the yeast. Let it sit for 5-10 minutes until frothy.
  2. Add the flour and salt, mixing until a rough dough forms.
  3. On a floured surface, knead the dough for about 10 minutes until it’s smooth and elastic.
  4. Gently knead in the fresh blueberries, being careful not to crush them.
  5. Place the dough in a covered bowl and let it rise for about 1 hour, or until doubled in size.
  6. Set your oven to 425°F (220°C) for that perfect bake.
  7. Punch down the dough, divide it into 8 pieces, and shape each piece into a bagel.
Cooking
  1. In a large pot, bring water to a boil, adding baking soda. Boil each bagel for about 1 minute per side, then drain.
  2. Place the boiled bagels on a baking sheet. (Optional) Brush with egg wash for an appealing shine.
  3. Bake for 20-25 minutes until golden brown.
  4. Let the bagels cool before serving to retain the delightful texture.

Notes

Serve warm, preferably with a spread of cream cheese or honey. Incorporate ground flaxseeds or chia seeds for added nutrition.
