  • 3 tablespoons white sesame seeds preferably toasted, look for fresh seeds from a reputable brand
  • 3 tablespoons Japanese Kewpie mayonnaise provides creamy richness and umami kick
  • 3 tablespoons neutral-flavored oil like grapeseed or sunflower; avoid olive oil
  • 1.5 tablespoons Japanese soy sauce such as Kikkoman or Yamasa for umami depth
  • 1 tablespoon rice vinegar use seasoned rice vinegar for added sweetness
  • 2-3 teaspoons honey or brown sugar for sweetness to balance flavors
  • ½ teaspoon toasted sesame oil for intensified sesame flavor
  • 2 teaspoons mirin (optional) for a sweet undertone, omit if desired

Method
 

Preparation
  1. Toast the sesame seeds in a dry sauté pan over medium-high heat until golden, about 5 minutes, stirring constantly.
  2. If desired, grind the cooled sesame seeds in a mortar and pestle or coffee grinder until most are a fine meal, leaving some whole for texture.
  3. In the same mortar, combine Kewpie mayonnaise, neutral oil, soy sauce, rice vinegar, mirin (if using), honey or brown sugar, and toasted sesame oil. Whisk vigorously until well combined.
  4. Taste the dressing and adjust the seasoning if necessary; add more mayo for thickness if desired.
  5. Store the dressing in a jar and refrigerate for at least an hour before serving to allow flavors to meld.

Notes

Store in an airtight container in the fridge for up to 2 weeks. The flavors deepen over time, so let it chill for a day for best results.
