Preparation
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan to prevent sticking.
- In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are well-coated, then firmly press the mixture into the bottom of the prepared pan.
Filling
- In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the Kahlua and vanilla extract, blending until fully combined.
- Pour the cheesecake filling over the crust in the springform pan, smoothing the top with a spatula.
Baking
- Place the cheesecake in the preheated oven and bake for 55-60 minutes, or until the center is set but slightly jiggles when shaken.
- Remove the cheesecake from the oven and allow it to cool for 15 minutes.
- Spread the sour cream evenly on top and return the cheesecake to the oven for an additional 10 minutes.
Chilling and Serving
- Let the cheesecake cool completely at room temperature before refrigerating for at least 4 hours, preferably overnight.
- Slice and serve chilled, optionally topped with whipped cream and cocoa powder.
Notes
