  • 0.25 cups unsalted butter, melted
Filling
  • 24 oz cream cheese, softened Opt for full-fat cream cheese to ensure a velvety texture.
  • 1 cups granulated sugar Can substitute with monk fruit for a lower calorie option.
  • 3 large eggs Incorporate one at a time to avoid overmixing.
  • 0.5 cups Kahlua (coffee liqueur)
  • 1 teaspoon vanilla extract
  • 1 cups sour cream Adds creaminess and a slight tang.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan to prevent sticking.
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are well-coated, then firmly press the mixture into the bottom of the prepared pan.
Filling
  1. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the Kahlua and vanilla extract, blending until fully combined.
  4. Pour the cheesecake filling over the crust in the springform pan, smoothing the top with a spatula.
Baking
  1. Place the cheesecake in the preheated oven and bake for 55-60 minutes, or until the center is set but slightly jiggles when shaken.
  2. Remove the cheesecake from the oven and allow it to cool for 15 minutes.
  3. Spread the sour cream evenly on top and return the cheesecake to the oven for an additional 10 minutes.
Chilling and Serving
  1. Let the cheesecake cool completely at room temperature before refrigerating for at least 4 hours, preferably overnight.
  2. Slice and serve chilled, optionally topped with whipped cream and cocoa powder.
