  • 1 cup sweetened condensed milk This is the secret to that creaminess.
  • 1/2 cup key lime juice, freshly squeezed Fresh is best, but bottled can be used.
  • 1 tablespoon lime zest Adds an aromatic punch.
  • 1 teaspoon vanilla extract Always go for pure vanilla.
  • 1 pinch salt Helps to balance the sweetness.
  • 1/2 cup graham cracker crumbs For that classic pie crunch; Honey Maid is a good choice.

Preparation
  1. Gather all ingredients and let the cream cheese reach room temperature, about 30 minutes.
  2. In a large bowl, beat the cream cheese with an electric mixer on medium speed for about 2 minutes, or until smooth and creamy.
  3. Pour in the sweetened condensed milk and continue beating for another 1-2 minutes until fully incorporated and smooth.
  4. Gently mix in the key lime juice, lime zest, vanilla extract, and salt. Blend until the dip is a uniform color, about another 1-2 minutes.
  5. Transfer the dip to a serving bowl, cover it with plastic wrap, and refrigerate for at least 1 hour to thicken and chill.
  6. Just before serving, sprinkle the graham cracker crumbs on top or serve extra crumbs on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For a dairy-free version, use vegan cream cheese and a suitable condensed milk alternative.
