Preparation
- Preheat the oven to 425°F (220°C).
- Place the chicken breast in a food processor and pulse until it forms fine crumbs.
- Transfer the chicken crumbs to a mixing bowl and add the egg, Parmesan cheese, half of the mozzarella, salt, pepper, garlic powder, and Italian seasoning. Mix until well combined.
- Line a baking sheet with parchment paper and shape the chicken mixture into an even 8-inch circle.
Baking
- Bake the crust for 15 minutes or until golden and set.
- Remove the crust from the oven and spread low carb pizza sauce over it. Then sprinkle with the remaining mozzarella cheese and add the bell peppers, red onion, mushrooms, and pepperoni.
- Return to the oven and bake for an additional 8 to 10 minutes until the cheese is melted and bubbly.
Serving
- Remove the pizza from the oven, garnish with fresh basil leaves, slice, and serve hot.
Notes
Use fresh ingredients for the best flavor. Leftovers can be refrigerated for up to 3 days; reheat in the oven to regain crispiness.
