Dough Ingredients
  • 2 cups all-purpose flour
  • 1 cup cold unsalted butter Ensure it’s cold for a flakier crust.
  • 1/2 tsp salt
  • 1/4 cup ice water
Filling Ingredients
  • 4 slices cream cheese (1/2 inch thick) Use thicker slices to maintain structure.
  • 2 pieces fresh peaches, sliced Use ripe peaches for best flavor.
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 2 tbsp honey Maple syrup or agave nectar can be used as substitutes.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine flour and salt. Grate the cold butter into the mix, blending until it resembles coarse crumbs.
  3. Gradually add ice water until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Roll out the chilled pastry to 1/8-inch thickness and cut into circles for a mini tart tin.
  5. Press the pastry circles firmly into the tin.
Assembly
  1. Place a slice of cream cheese into each tart shell and top generously with peach slices.
  2. In a small bowl, whisk together the cinnamon, lemon juice, and honey. Brush this mixture over the tarts for added flavor.
Baking
  1. Place the tart tin in the oven and bake for 20-25 minutes or until golden brown.
  2. Allow to cool for a few moments before removing from the tin and serving.

Notes

Serve garnished with mint and pair with light tea or lemonade.
