  • 1.5 cups chocolate cookie crumbs
  • 0.5 cups unsalted butter, melted
Filling
  • 1 cup granulated sugar

  • 1 cup semi-sweet chocolate chips Opt for high-quality chocolate.
  • 3 large eggs Can be substituted with flaxseed meal for a vegan option.
  • 1 teaspoon vanilla extract
  • 0.25 cups cocoa powder
  • 1 pinch salt
Topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the chocolate cookie crumbs and melted butter until well mixed. Press the crust mixture firmly into the bottom of a pie dish.
Filling
  1. In a saucepan over medium heat, combine heavy cream and semi-sweet chocolate chips. Stir until the chocolate is fully melted and smooth.
  2. In a separate bowl, whisk together sugar, eggs, vanilla extract, cocoa powder, and a pinch of salt until smooth.
  3. Gradually add the chocolate mixture to the egg mixture, whisking continuously to avoid scrambling the eggs.
  4. Pour the filling into the prepared crust and smooth the top with a spatula.
  5. Bake for about 25-30 minutes, or until the filling is set in the center.
  6. Remove from oven, let cool for a few minutes, then refrigerate for at least 2 hours.
  7. Serve topped with a dollop of whipped cream.

Notes

For an impressive presentation, serve alongside fresh berries and a drizzle of chocolate sauce. Pair with coffee or sweet dessert wine. Can be made vegan or gluten-free with specific substitutions.
