  • 1 cup pearl barley Use whole grain barley for added fiber.
  • 8 ounces mushrooms, sliced Cremini, shiitake, or button mushrooms work well.
  • 1 onion, chopped SAUTE until softened.

  • 2 celery stalks, diced
  • 4 cloves garlic, minced Enhances aroma.
  • 6 cups vegetable broth Use high-quality vegetable broth for best flavor.
  • 2 cups spinach or kale Stir in at the end to wilt.
  • 1 teaspoon dried thyme Infuses herbal notes.
  • 1 bay leaf Remove before serving.
  • Salt and pepper to taste
  • 2 tablespoons olive oil for sautéing Use for sautéing vegetables.

Method
 

Preparation
  1. In a large pot, heat about 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add the chopped onions, diced carrots, and diced celery. Sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are browned and fragrant, approximately 6-8 minutes.
  4. Add in the pearl barley, vegetable broth, dried thyme, bay leaf, and season with salt and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let it simmer uncovered for about 45 minutes or until the barley is tender.
  6. Stir in the spinach or kale, allowing it to wilt for an additional 5 minutes.
  7. Before serving, remember to remove the bay leaf for a clean finish.

Notes

For best flavor, use fresh, organic vegetables and high-quality vegetable broth. To enhance health benefits, consider adding more leafy greens and using whole grains.
