Preparation
- In a large pot, heat about 2 tablespoons of olive oil over medium heat until shimmering.
- Add the chopped onions, diced carrots, and diced celery. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are browned and fragrant, approximately 6-8 minutes.
- Add in the pearl barley, vegetable broth, dried thyme, bay leaf, and season with salt and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer uncovered for about 45 minutes or until the barley is tender.
- Stir in the spinach or kale, allowing it to wilt for an additional 5 minutes.
- Before serving, remember to remove the bay leaf for a clean finish.
