Graham Cracker Crust
  • 2 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
Cream Cheese Filling
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
Fruit Layers
  • 3 bananas, sliced
  • 1 cup strawberries, sliced
  • 1 cup pineapple chunks
Toppings
  • 1 cup whipped topping
  • chocolate syrup
  • chopped nuts (optional) To add texture and flavor.

Method
 

Preparation
  1. In a large bowl, combine the graham cracker crumbs with the melted butter until it resembles wet sand. Press this mixture firmly into a 9x13 inch baking dish to create the crust.
  2. In another bowl, beat the cream cheese with the powdered sugar until smooth and creamy.
  3. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Fold this whipped mixture gently into the cream cheese mix until combined.
  4. Spread half of this cream cheese mixture over the prepared crust.
  5. Layer half of the banana slices, strawberries, and pineapple on top of the cream cheese layer.
  6. Add the remaining cream cheese mixture on top of the fruit layer, smoothing it out evenly.
  7. Top with the remaining banana, strawberry, and pineapple layers.
  8. Spread the whipped topping over the entire surface and drizzle with chocolate syrup. Add chopped nuts if desired.
  9. Chill in the refrigerator for at least 4 hours or overnight before serving to allow the flavors to meld together beautifully.

Notes

For a healthier version, consider swapping refined sugar for monk fruit or honey and using Greek yogurt instead of cream cheese. Bananas are a great source of potassium, supporting heart health.
