Ingredients
  

Main Ingredients
  • 1 Tbsp butter Room temperature for easy melting
  • 2 large eggs Use 3 eggs if using an 8-inch pan
  • 1 piece Chinese sausage Sliced
  • 1 piece Vietnamese ham (Cha Lua) Optional but recommended
  • 120 g seasoned ground meat Choose pork, beef, or chicken
Seasoned Ground Meat
  • 0.5 Tbsp oyster sauce Adds umami flavor
  • 1 tsp Maggi Seasoning Adds depth
  • 1 clove garlic Finely grated, optional
  • 0.5 piece green onion Chopped, optional for aromatic touch
Optional Condiments
  • white or black pepper
  • Sriracha hot sauce
  • ketchup
  • Maggi Seasoning

Method
 

Prepare the Seasoned Ground Meat
  1. In a mixing bowl, combine the ground meat, oyster sauce, Maggi seasoning, and garlic until well mixed.
  2. Heat a little water in a sauté pan over medium heat until simmering, then add the meat mixture, breaking it up into small chunks. Cook until no longer pink, about 6-7 minutes. Stir in the green onions and set aside.
Sear the Toppings
  1. In a lightly greased pan, add the sliced Chinese sausage and Vietnamese ham. Sear over medium heat until browned and fragrant, about 3-4 minutes. Set aside but keep the fat in the pan.
Make the Pan Eggs
  1. In the same pan over medium-low heat, add the butter until melted and bubbly.
  2. Crack the eggs directly into the pan and let them sit untouched for 1 minute.
  3. Carefully lay your topping mixture over the eggs and cover with a lid to allow steaming. This will take about 5 minutes.
Finishing Touches
  1. Once the whites are set and yolks still jiggle, garnish with extra green onions if desired.
  2. Serve immediately with crusty bread or condiments.

Notes

You can prepare your seasoned ground meat ahead of time and store it in the fridge. Reheat when ready to cook.
