Dressing Ingredients
  • 2 tablespoons extra virgin olive oil Use high-quality, cold-pressed olive oil.

Preparation
  1. Wash and dry the arugula thoroughly using a salad spinner or by patting with paper towels. Place in a large salad bowl.
  2. Slice each peach into even wedges and thinly slice the red onion.
Making the Dressing
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth.
Combining the Salad
  1. Add sliced peaches, red onion, feta, and toasted almonds on top of the arugula.
  2. Drizzle the dressing over the salad ingredients.
  3. Gently toss until everything is combined. Serve immediately.

Notes

Use ripe peaches for best flavor. Make ahead by prepping ingredients but toss just before serving to avoid wilting.
