Preparation
- Wash and dry the arugula thoroughly using a salad spinner or by patting with paper towels. Place in a large salad bowl.
- Slice each peach into even wedges and thinly slice the red onion.
Making the Dressing
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth.
Combining the Salad
- Add sliced peaches, red onion, feta, and toasted almonds on top of the arugula.
- Drizzle the dressing over the salad ingredients.
- Gently toss until everything is combined. Serve immediately.
Notes
Use ripe peaches for best flavor. Make ahead by prepping ingredients but toss just before serving to avoid wilting.
