Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a mixing bowl, combine the diced peaches, 1 cup of granulated sugar, and lemon juice. Allow the mixture to rest while you prepare the crumble.
- In a separate bowl, whisk together the flour, oats, brown sugar, baking powder, and salt.
- Cut in the softened butter until the mixture resembles coarse crumbs, then add the vanilla extract and mix well.
- Firmly press half of this crumb mixture into the bottom of the greased baking dish to form the crust.
Assembly
- Spread the peach mixture over the crust evenly.
- Sprinkle the remaining crumb mixture over the peaches generously.
Baking
- Bake for 35-40 minutes, or until the top is golden brown.
- Allow the bars to cool before slicing into squares for the best serving experience.
Notes
