Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine the diced peaches, 1 cup of granulated sugar, and lemon juice. Allow the mixture to rest while you prepare the crumble.
  3. In a separate bowl, whisk together the flour, oats, brown sugar, baking powder, and salt.
  4. Cut in the softened butter until the mixture resembles coarse crumbs, then add the vanilla extract and mix well.
  5. Firmly press half of this crumb mixture into the bottom of the greased baking dish to form the crust.
Assembly
  1. Spread the peach mixture over the crust evenly.
  2. Sprinkle the remaining crumb mixture over the peaches generously.
Baking
  1. Bake for 35-40 minutes, or until the top is golden brown.
  2. Allow the bars to cool before slicing into squares for the best serving experience.

Notes
