Ingredients

Main Ingredients
  • 0.5 cup peach puree Fresh peaches are ideal; frozen ones work too. Just thaw them first!
  • 3 tablespoons balsamic vinegar Opt for a high-quality, aged balsamic for deeper flavor.
  • 1 tablespoon Dijon mustard I prefer Grey Poupon for its smooth texture and flavor.
  • 1 tablespoon honey Local honey can provide allergy relief!
  • 0.5 cup extra virgin olive oil Go for a robust flavor; brands like Colavita or California Olive Ranch are great.
  • 0.25 teaspoon salt Add to taste; I use sea salt.
  • 0.125 teaspoon freshly ground black pepper Brings out the best flavor.

Method

Preparation
  1. In a medium bowl or blender, combine the peach puree, balsamic vinegar, Dijon mustard, and honey. Blend for about 30 seconds for a super-smooth consistency.
  2. While whisking continuously, slowly pour in the olive oil until the mixture is smooth and emulsified. This may take about 1-2 minutes.
  3. Add salt and pepper, whisk again to combine and taste the vinaigrette.
  4. Adjust sweetness or tang with more honey or vinegar as desired.
  5. Transfer to a sealed container and refrigerate for at least 30 minutes to allow flavors to develop.
  6. Shake or stir before drizzling over your favorite dishes.

Notes

This vinaigrette keeps well in the fridge for about a week. It's perfect for salads, grilled meats, and roasted vegetables, and can be made ahead.
