- In a medium bowl or blender, combine the peach puree, balsamic vinegar, Dijon mustard, and honey. Blend for about 30 seconds for a super-smooth consistency.
- While whisking continuously, slowly pour in the olive oil until the mixture is smooth and emulsified. This may take about 1-2 minutes.
- Add salt and pepper, whisk again to combine and taste the vinaigrette.
- Adjust sweetness or tang with more honey or vinegar as desired.
- Transfer to a sealed container and refrigerate for at least 30 minutes to allow flavors to develop.
- Shake or stir before drizzling over your favorite dishes.
Notes
This vinaigrette keeps well in the fridge for about a week. It's perfect for salads, grilled meats, and roasted vegetables, and can be made ahead.
