Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the melted butter and brown sugar until fully incorporated.
  3. Add the pumpkin and vanilla extract, whisk until smooth.
  4. In a separate bowl, whisk together the all-purpose flour, cornstarch, pumpkin pie spice, baking powder, salt, and nutmeg.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined.
  6. Pour the batter into the prepared baking dish, spreading it evenly.
  7. In a small bowl, combine the granulated sugar and cinnamon, then sprinkle this mixture over the brownie batter.
Baking
  1. Bake in the preheated oven for 35-38 minutes until the edges are golden brown and the center is set.
  2. Remove from the oven and allow to cool slightly before lifting the brownies out using the parchment paper.

Notes
