Ingredients
  

For the Crust
  • 2 cups Graham cracker crumbs Opt for organic, whole grain varieties for a nuttier flavor.
  • 1/2 cup Butter (melted) Ensure the butter is fully melted for a cohesive crust.
For the Cream Cheese Layer
  • 8 oz Cream cheese (softened) Use full-fat for a richer texture.
  • 1 cup Powdered sugar Blend until smooth and creamy.
For the Pumpkin Layer
  • 1 pkg Pumpkin pudding mix Can substitute with homemade pumpkin puree and cornstarch.
  • 2 cups Milk Whisk with pumpkin pudding mix until thickened.
For Topping
  • 1 container Whipped topping Add additional for garnishing.
  • 1 teaspoon Pumpkin spice Sprinkle on top for fall flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs with the melted butter until it resembles wet sand. Press evenly into the bottom of a 9×13 inch pan.
  3. In another bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
  4. In a separate bowl, whisk together the pumpkin pudding mix with milk until it thickens, about 2 minutes.
  5. Spread the pumpkin layer over the cream cheese layer.
  6. Top with whipped topping and sprinkle with pumpkin spice.
Chilling
  1. Refrigerate for at least 2 hours before serving.

Notes

This dessert is a no-bake treat that's great for making a day in advance. Serve chilled for best texture.
