Ingredients
  

Graham Cracker Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar
Cream Cheese Filling
  • 32 ounces cream cheese, softened 4 (8-ounce) packages
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
Strawberry Topping
  • 2 cups fresh strawberries, sliced Opt for fresh, locally-sourced strawberries for maximum flavor.
  • 1/4 cup strawberry preserves

Preparation
  1. Preheat your oven to 325°F (160°C) and grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of the prepared baking dish.
Make Cream Cheese Filling
  1. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  2. Add the vanilla extract and blend until well incorporated.
  3. Introduce the eggs, one by one, mixing thoroughly after each addition.
  4. Pour this cheesecake mixture over your prepared crust.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until the center is set but still slightly jiggly.
  2. Allow the cheesecake to cool completely at room temperature.
Prepare Strawberry Topping
  1. Combine the sliced strawberries and strawberry preserves in a small saucepan over low heat.
  2. Cook for about 5-7 minutes until the strawberries soften and the mixture becomes syrupy.
Assembly
  1. Spread the strawberry topping over the cooled cheesecake.
  2. Refrigerate the cheesecake for at least 2 hours before slicing into bars.
