- Preheat your oven to 325°F (160°C) and grease a 9×13 inch baking dish.
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of the prepared baking dish.
Make Cream Cheese Filling
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Add the vanilla extract and blend until well incorporated.
- Introduce the eggs, one by one, mixing thoroughly after each addition.
- Pour this cheesecake mixture over your prepared crust.
Baking
- Bake in the preheated oven for 30-35 minutes or until the center is set but still slightly jiggly.
- Allow the cheesecake to cool completely at room temperature.
Prepare Strawberry Topping
- Combine the sliced strawberries and strawberry preserves in a small saucepan over low heat.
- Cook for about 5-7 minutes until the strawberries soften and the mixture becomes syrupy.
Assembly
- Spread the strawberry topping over the cooled cheesecake.
- Refrigerate the cheesecake for at least 2 hours before slicing into bars.
Notes
For a beautifully plated presentation, slice bars with a hot, dry knife and garnish with fresh whole strawberries.
