Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, combine the diced peaches, sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until well blended.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the peach mixture, stirring until just combined.
- If you choose to use nuts, fold in the chopped nuts at this point.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For best results, use ripe peaches that yield slightly to pressure. Substitute refined sugar with monk fruit sweetener for a healthier option.
