  • 2 cups Fresh peaches, peeled and diced
  • 1/2 cup Sugar
  • 1/4 cup Brown sugar
  • 1/2 cup Vegetable oil
  • 2 large Large eggs
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1/2 cup Chopped nuts (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the diced peaches, sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until well blended.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry mixture to the peach mixture, stirring until just combined.
  5. If you choose to use nuts, fold in the chopped nuts at this point.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, use ripe peaches that yield slightly to pressure. Substitute refined sugar with monk fruit sweetener for a healthier option.
