  • 1/4 cup sugar Use organic cane sugar for a natural sweetness.
  • 1/4 cup water Filtered water works best for clarity.
  • 1 1/2 teaspoons rosemary Fresh rosemary adds aromatic depth; dried can be substituted in a pinch.
  • 2 teaspoons grated ginger Fresh ginger gives a beautiful zing; however, you can use ground ginger if needed.
Main Ingredients
  • 1 cup white wine A crisp, dry white wine like Sauvignon Blanc or Pinot Grigio is ideal. Avoid overly sweet options!
  • 4 teaspoons lemon juice Freshly squeezed for the best flavor.
  • 1 teaspoon fresh ginger Add for an extra kick of flavor, don’t skip it!
  • 3 teaspoons herb syrup Use the syrup you’ll make from the sugar and rosemary mix.
  • 1/4 cup club soda For that delightful fizz; use a fresh, high-quality brand.
  • 1 sprig thyme For garnish.
  • ice cubes Make sure to use clear ice for aesthetic appeal!

Method
 

Creating the Herb Syrup
  1. In a small saucepan, heat the 1/4 cup of water, 1/4 cup of sugar, rosemary, and 2 teaspoons of grated ginger over medium heat. Stir continuously until the sugar fully dissolves (about 5-7 minutes).
  2. Keep an eye on the syrup; you don’t want it to boil! Just a gentle simmer will do.
Infusion
  1. Once dissolved, remove it from heat and let it infuse for 10 minutes.
Combining Ingredients
  1. In a large glass or cocktail shaker, combine 1 cup of white wine, 4 teaspoons of lemon juice, 1 teaspoon of fresh ginger, and 3 teaspoons of your herb syrup.
  2. Don’t skip the fresh ginger; it’s essential for balancing flavors.
Assembly
  1. Fill your glass with ice cubes, pour the wine mixture over the ice, and top it with 1/4 cup of club soda.
  2. Add a sprig of thyme for that final touch and a bit of elegance. Toss in a lemon slice if you’re feeling fancy!
  3. You’ll know it’s ready when you see those lovely bubbles rising through the glass!

Notes

Store the syrup in an airtight container in the refrigerator for up to a week. You can prepare the syrup in advance but combine the drink just before serving for optimal fizz.
