- Prep Your Ingredients: Before you start cooking, prepare all your ingredients.
- Pound the Spices: In a mortar, pound the white peppercorns, garlic, and chilies in that order with a pestle until quite coarse.
- Heat the Oil: Heat oil in a wok over medium heat until shimmering but not smoking.
Cooking
- Sauté the Aromatics: Once the oil is hot, add the pounded spices. Stir until fragrant, around 1-2 minutes.
- Cook the Chicken: Add the chicken to the wok. Stir-fry until the chicken is no longer pink, about 5-7 minutes.
- Add the Seasonings: Season with oyster sauce, fish sauce, and sugar. Stir to coat the chicken evenly.
- Add Holy Basil: Add the holy basil leaves last, stirring until just wilted.
- Serve and Enjoy: Turn off the heat and transfer the Thai Holy Basil Chicken to a plate or serve directly over rice.
Notes
