  2. Pound the Spices: In a mortar, pound the white peppercorns, garlic, and chilies in that order with a pestle until quite coarse.
  3. Heat the Oil: Heat oil in a wok over medium heat until shimmering but not smoking.
Cooking
  1. Sauté the Aromatics: Once the oil is hot, add the pounded spices. Stir until fragrant, around 1-2 minutes.
  2. Cook the Chicken: Add the chicken to the wok. Stir-fry until the chicken is no longer pink, about 5-7 minutes.
  3. Add the Seasonings: Season with oyster sauce, fish sauce, and sugar. Stir to coat the chicken evenly.
  4. Add Holy Basil: Add the holy basil leaves last, stirring until just wilted.
