  • 1 teaspoon lemon juice To brighten the flavors.
  • 1/2 teaspoon vanilla extract Adds warmth and depth.
Crisp Topping
  • 1 cup rolled oats Use old-fashioned for a heartier texture.
  • 3/4 cup all-purpose flour
  • 1/2 cup packed brown sugar For a deeper molasses flavor.
  • 1/2 teaspoon ground cinnamon Adds cozy warmth.
  • 1/4 teaspoon salt Just a pinch to balance out the sweetness.
  • 6 tablespoons cold unsalted butter Cut into small pieces before adding.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced strawberries, sliced peaches, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix gently and let it sit for about 10 minutes.
  3. Grease an 8×8 inch baking dish and spread the fruit mixture evenly across the bottom.
Making the Topping
  1. In another bowl, mix rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt.
  2. Incorporate the cold, diced unsalted butter into the dry ingredients until you achieve a coarse crumb texture.
Baking
  1. Sprinkle the oat topping evenly over the fruit layer in the baking dish.
  2. Bake in the oven for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbling.
  3. Allow it to cool slightly before serving.

Notes
