Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually fold the dry mixture into the creamy butter blend until just combined.
- Roll the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Use your thumb or a spoon to create a small indentation in the center of each ball.
- Fill each indentation with your chosen fruit jam.
- Bake in the oven for 10-12 minutes, or until edges are lightly golden.
- Allow cookies to cool for a few minutes, then dust with powdered sugar and transfer to a cooling rack.
Notes
For best results, allow dough to chill for about 30 minutes before baking. These cookies can be frozen for up to 3 months.
