Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually fold the dry mixture into the creamy butter blend until just combined.
  6. Roll the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  7. Use your thumb or a spoon to create a small indentation in the center of each ball.
  8. Fill each indentation with your chosen fruit jam.
  9. Bake in the oven for 10-12 minutes, or until edges are lightly golden.
  10. Allow cookies to cool for a few minutes, then dust with powdered sugar and transfer to a cooling rack.
