  • 2 cups shredded cheese (cheddar or Mexican blend) Mexican blend provides the best flavor.
  • 1 teaspoon taco seasoning Don't skimp on this for flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, taco sauce, sour cream, and taco seasoning. Mix until well blended.
  3. In a greased 9×13 inch baking dish, layer half of the tortilla chips at the bottom.
  4. Pour half of the chicken mixture over the chips, and sprinkle with half of the cheese.
  5. Repeat the layers with the remaining chips, chicken mixture, and cheese.
Baking
  1. Bake for 25-30 minutes or until the cheese is melted and bubbly.
Serving
  1. Serve warm, garnished with optional toppings.

Notes

For a vegan version, substitute chicken with chickpeas or jackfruit and use plant-based sour cream and cheese. Ensure taco sauce and tortilla chips are gluten-free for a gluten-free option.
