Thai Garlic Pepper Chicken

Ingredients
  

For the Chicken
  • 500 g chicken breast or thigh, cut into 1-cm thick slices I prefer using thighs for extra juiciness.
  • 1 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 1 tsp Golden Mountain sauce or regular soy sauce Golden Mountain sauce adds a distinctive flavor.
  • 1 tsp fish sauce
  • 1 tsp black soy sauce as needed for color.
  • 1.5 tsp sugar
  • 0.25 tsp ground white pepper
  • 0.25 tsp ground black pepper
  • 7-8 stems cilantro stems, chopped
  • Vegetable oil for frying I love using canola or peanut oil for their high smoke points.

Method
 

Preparation
  1. Mix together the chicken slices with oyster sauce, soy sauce, Golden Mountain sauce, fish sauce, white pepper, and black pepper. Set aside to marinate while you prepare the garlic.
  2. In a small pot or wok, add the chopped garlic, then pour in just enough vegetable oil to fully cover it. Fry the garlic over low heat, stirring occasionally, until it turns a gorgeous golden brown—about 5 minutes.
  3. Drain the fried garlic from the oil, reserving the oil for later use.
  4. In a clean wok, heat about 2 tablespoons of the garlic oil over high heat.
  5. Pour a tablespoon of the reserved garlic oil into the marinated chicken and stir well to combine.
Cooking
  1. When the oil is hot, carefully add the marinated chicken and sugar. Stir continuously until the chicken is cooked thoroughly, adding water if necessary to keep the mixture moist.
  2. Once the chicken is cooked through, stir in half of the fried garlic and the chopped cilantro stems for added flavor, then remove from heat.
Serving
  1. Just before serving, sprinkle the remaining fried garlic over the top for extra crunch and flavor. Serve with fluffy jasmine rice or elevate other dishes by incorporating it.

Notes

Leftovers can be stored in an airtight container for up to 3 days in the fridge. This dish can also be frozen in an airtight container for up to 2 months. Keep an eye on the garlic while frying, as it can go from golden to burnt in seconds.
