Thai Garlic Pepper Pork

Ingredients
  

For the seasoning
  • 1 teaspoon white peppercorns, freshly ground For a more vibrant flavor. Can substitute with black pepper.
  • 2.5 heads garlic, peeled Use fresh garlic for the best flavor.
  • 200 grams pork, cut into bite-sized pieces Pork shoulder or tenderloin works well.
  • 0.5 teaspoon salt Adjust according to taste.
For cooking
  • 1 tablespoon oil Canola or vegetable oil is best for frying.
  • 0.5 tablespoon oyster sauce Adds a rich umami flavor.
  • 0.5 tablespoon soy sauce Adds depth and a hint of sweetness.
  • 0.5 teaspoon sweet soy sauce Brings a lovely sweetness to balance the flavors.
  • 3 leaves cilantro, for garnish Fresh cilantro adds a pop of color.
  • 1 serving cucumber slices For a refreshing crunch on the side.

Method
 

Preparation
  1. Pound 1 teaspoon of white peppercorns in a mortar and pestle until fine.
  2. Add 2.5 heads of peeled garlic and roughly pound until you have a chunky paste.
  3. In a bowl, combine the 200 grams of pork, and sprinkle with 0.5 teaspoon of salt.
  4. Add the pounded garlic and white pepper mixture to the pork and massage for about one minute.
Cooking
  1. Heat a pan over medium heat and add 1 tablespoon of oil until shimmering.
  2. Add the marinated pork and fry for about 5-7 minutes, stirring occasionally.
  3. Add 0.5 tablespoon oyster sauce, 0.5 tablespoon soy sauce, and 0.5 teaspoon sweet soy sauce to the pan.
  4. Continue to fry for another 3-4 minutes until fully cooked and coated in sauce.
  5. Garnish with 3 cilantro leaves and serve with cucumber slices.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on low heat for best results. Marinate pork in garlic and pepper mixture for an hour for richer flavor.
