Preparation
- Rinse the dried longan until the water runs clear to remove any impurities. Soak the dried longan in clean water for about 20 minutes until they soften.
- Clean the pandan leaves with water. If using dried leaves, consider using a steeper for easier removal.
Cooking
- In a pot over medium heat, add the soaked longan and pandan leaves to 50.7 ounces of water. Bring to a gentle boil, then reduce heat and let it simmer for about 20 minutes.
- Once the longan has softened, add 1 cup of brown sugar and stir until fully dissolved. Taste and adjust sweetness if necessary.
Serving
- Turn off the heat and transfer the drink to a safe container. Allow it to cool to room temperature and serve over ice for a refreshing treat.
Notes
Store in the refrigerator for up to a week. Shake or stir before serving as ingredients may settle. Can be made a day in advance.
