  • 1/2 cup dried longan Look for high-quality varieties without added sugars.
  • 3 leaves pandan Fresh is best, but frozen is also acceptable.
  • 50.7 ounces water Use filtered water for the best taste.
  • 1 cup brown sugar Can be swapped for palm sugar for a richer taste.

Method
 

Preparation
  1. Rinse the dried longan until the water runs clear to remove any impurities. Soak the dried longan in clean water for about 20 minutes until they soften.
  2. Clean the pandan leaves with water. If using dried leaves, consider using a steeper for easier removal.
Cooking
  1. In a pot over medium heat, add the soaked longan and pandan leaves to 50.7 ounces of water. Bring to a gentle boil, then reduce heat and let it simmer for about 20 minutes.
  2. Once the longan has softened, add 1 cup of brown sugar and stir until fully dissolved. Taste and adjust sweetness if necessary.
Serving
  1. Turn off the heat and transfer the drink to a safe container. Allow it to cool to room temperature and serve over ice for a refreshing treat.

Notes

Store in the refrigerator for up to a week. Shake or stir before serving as ingredients may settle. Can be made a day in advance.
